Pasta with Lima Beans


Ingredients:
  • 1/3 cup butter
  • 1 can Lima beans
  • 3 fresh tomatoes, peeled and chopped
  • 2 garlic cloves chopped
  • 1 small can sweet corn kernels
  • Salt, pepper and fresh parsley to season and garnish

Directions:

  1. Melt the butter in a large saucepan over medium heat. Stir in Lima beans and salt, and cook until tender, about 15 minutes.
  2. Add fresh tomatoes in the saucepan and mix with the beans. Cook until tomatoes are tender, about 10 minutes.
  3. Stir garlic and corn into Lima beans and cook 5 minutes more.
  4. Cook pasta according to your packet instructions. Add the drained pasta into Lima beans mixture. Season with black pepper and fresh parsley or coriander.
