Ingredients:
- 1/3 cup butter
- 1 can Lima beans
- 3 fresh tomatoes, peeled and chopped
- 2 garlic cloves chopped
- 1 small can sweet corn kernels
- Salt, pepper and fresh parsley to season and garnish
Directions:
- Melt the butter in a large saucepan over medium heat. Stir in Lima beans and salt, and cook until tender, about 15 minutes.
- Add fresh tomatoes in the saucepan and mix with the beans. Cook until tomatoes are tender, about 10 minutes.
- Stir garlic and corn into Lima beans and cook 5 minutes more.
- Cook pasta according to your packet instructions. Add the drained pasta into Lima beans mixture. Season with black pepper and fresh parsley or coriander.
