- 1 courgette
- 1/2 cup freshly grated Parmesan cheese
- 1 carrot
- 1 red bell pepper
- 2 eggs beaten
- 2 garlic cloves
- 4 Tb unbleached plain flour
- Canola oil for frying
- Salt and ground black pepper
- Fresh parsley
- Soy sauce (low sodium)
Directions:
- To make the fritters, grate the courgette roughly on to a paper towel, then gather up the sides and squeeze tightly to remove excess moisture. Tip the courgette into a bowl and stir in the grated carrot, Parmesan, chopped red bell pepper, eggs, garlic, fresh parsley and flour and season to taste with salt and pepper.
- Heat enough canola oil to cover the bottom of a large frying pan. Add 1 full tablespoon of the mixture for each fritter and cook for 2-3 minutes on each side until golden. Drain on a paper towel and serve with say sauce.
