Courgette Fritters with Soy Sauce

Ingredients:

  • 1 courgette
  • 1/2 cup freshly grated Parmesan cheese
  • 1 carrot
  • 1 red bell pepper
  • 2 eggs beaten
  • 2 garlic cloves
  • 4 Tb unbleached plain flour
  • Canola oil for frying
  • Salt and ground black pepper
  • Fresh parsley
  • Soy sauce (low sodium)

Directions:

  1. To make the fritters, grate the courgette roughly on to a paper towel, then gather up the sides and squeeze tightly to remove excess moisture. Tip the courgette into a bowl and stir in the grated carrot, Parmesan, chopped red bell pepper, eggs, garlic, fresh parsley and flour and season to taste with salt and pepper.
  2. Heat enough canola oil to cover the bottom of a large frying pan. Add 1 full tablespoon of the mixture for each fritter and cook for 2-3 minutes on each side until golden. Drain on a paper towel and serve with say sauce.
