Focaccia with Green Peppercorns & Rock Salt

Ingredients:
  • 3 cups white flour
  • 1/2 tsp salt
  • 1/4 tsp dried yeast
  • 1Tb green peppercorn
  • 5 tsp olive oil
  • 1 cup lukewarm water
  • 4 tsp crushed rock salt
Directions:
  1. Sift the flour and salt into a mixing bowl. Stir in the yeast and peppercorns. Make a hole in the center and add 1 tsp of the oil and half the water. Mix gradually incorporating the flour and adding more water to make a soft dough.
  2. Knead the dough on a floured surface for 10 minutes. return to the clean, lightly oiled bowl, cover with plastic wrap and leave in a warm place until double in size.
  3. Knead the dough for 2 minutes and place on a oiled baking sheet and pat out to an oval. Cover and leave for 30 more minutes.
  4. Preheat the oven 400 F. Make a few dimples in the surface of the dough with your fingers. Drizzle with the remaining olive oil and sprinkle with salt. Bake for 25-30 minutes until pale gold.
