Spicy potatoes & Cauliflower


Ingredients:
  • 3 medium size Idaho potatoes
  • 5T canola oil
  • 1T ground cumin
  • 1T ground coriander
  • 1tsp ground turmeric
  • 1T chili powder
  • 1 fresh red pepper, seeded and finely thin sliced
  • 1 small cauliflower, broken into small florets
  • 2 garlic cloves cut into shreds
  • 1T chopped fresh parsley or fresh coriander 
  • Salt and pepper   

    Directions:
    1. Bring a pan of lightly salted water to the boil and cook the potatoes in their skin for 20 min, or until  tender. Drain and leave to cool, then peel and cut them into small cubes.
    2. Heat the oil in a wok and add the ground spices and the thinly sliced red pepper. Let them sizzle for a minute, and then add the cauliflower. Stir for 5 minutes over a medium heat. Add the potatoes, tossing them until coated. Stir-fry for 2-3 min. Season with salt, garlic, pepper and fresh parsley.
    You can serve this easy dish with Tzatziki dip.
